Bacon and Brie Pinwheels

We love these bacon brie rolls, and they’re perfect for Thanksgiving! You’ll need some puff pastry, thawed, about ½ of a cup of cranberry sauce, 8 slices of artful Swine bacon (cooked and crumbled), about a ½ of a cup brie, finely chopped, an egg and a little water. Heat the oven to 400°F. Line a baking tray with parchment paper. Unroll puff pastry on a lightly floured work surface and spread the cranberry sauce all over evenly, add the brie and bacon crumbles.

Tightly roll the pastry, starting at one of the long ends. Cover with plastic wrap and chill in the freezer for 10-15 minutes.

Remove from freezer and using a serrated knife, slice ½-inch thick slices. Place cut side down on prepared baking tray.

Beat together the egg and water, and brush over pinwheels.

Bake for 12-15 minutes, until pastry is golden brown. Remove from oven and allow to cool for 5 minutes before serving.
